Artichoke salad

The recipe of today is “artichoke  salad” from the traditional Moroccan food and dishes :
Ingredients :
  • artichoke hearts: 8
  • garlic cloves: 2
  • parsley and coriander chopped: 2 tbsp. soup
  • lemon juice 3 c. soup
  • Olive oil: 3 tbsp. soup
  • salt and pepper
Method :
1 – Cook the artichokes to steam for 15 minutes, then cut them in four.
2 – Prepare the marinade by mixing all the ingredients.
3 – In a bowl, combine artichoke pieces and pour them with marinade.
4 – Let stand 15 minutes before serving the salad.

How to prepare “Tanjia” :

I offer you today, how to prepare “tanjia marrakechia” from the Moroccan cuisine, very tasty and easy to prepare.
“tanjia marrakechia” is traditional Moroccan recipe usually prepared by mens, cooked in the Moroccan oven.
Ingredients :
  • 2 kg of mutton
  • 5 cloves of garlic
  • 100 grams of ghee
  • Few of fresh saffron
  • 1 tablespoon of “baharat”
  • Two cups of water
  • Tablespoons of cumin
  • 2 lemons pickle.
Method :
Put all ingredients in “Tanjia”: meat, spices .. And add water.
close “Tanjia” with paper and wire, dig some holes and put it in the oven to cook in the hot ash for 6 to 8 hours.
Then provides very a hot accompanied by bread and Moroccan mint tea.

Chicken with lemon and olives

hello, the dish of the day is a traditional moroccan dish, it’s “chicken with olives and lemon
  • Two chickens
  • 3 medium onions grated.
  • 2 garlic
  • Teaspoon of ginger powder
  • Teaspoon of black and white pepper.
  • Salt and a small workshop saffron dissolved in a little water
  • Big cup of green olives and 2 lemon pickle
  • 2 tablespoons of chopped parsley added in the middle of cooking.
Method :
In cooker put chicken with onion, ginger, salt and spices and move all over the fire minutes and then add about a liter of water and leave on the fire until chicken is cooked then add lemon chopped, olive and leave about 10 minutes and then pour the chicken and adorn grains olive and lemon with the stock.

Peas dish

peas dish receipe Ingredients:
  •  1.5 kilograms of sheep and preferably from shoulder.
  •  1 Kilo of peas.
  • 12 tablets  of the artichoke and cleaned and soaked in lemon juice
  • Teaspoon of ginger powder
  • A small workshop of saffron
  • 3 tablespoons of olive oil
  • Clove garlic
  • lemon juice
  • Marinated lemon peel
  • Big cup olive .
  • Salt and pepper.
Method :

Roasted chicken dish

Hello, today i want to show you how to cook a roasted chicken :
recipe of roasted chicken :
Ingredients :
  • 2 Chickens  of 1/2 kilo.
  • 4 medium onions grated.
  • 4 cloves garlic mashed.
  • Workshop saffron dissolved in ¼ cup warm water.
  • 3 tablespoons butter + half cup of vegetable oil.
  • 3 tablespoons salty butter.
  • Salt – white and black pepper – a small pinch of ginger powder
  • eggs and almonds for garnish
Method :

Before, mix chicken with a pinch of salt and cut limes and wash it with water.
Keep chicken in saucepan with:
Onion, garlic, salt and saffron and spices + ghee and oil and leave about 10 minutes and then add the saffron and 1 liter of water and let it cook on medium heat for an hour.
Pull the chicken and put it in the the oven tray,scrub chicken with butter  and introduce it in the oven for Roasting .
At the time we leave the remaining broth in the pot to consolidate.
When applying intalled gravy over the chicken and decorate with fried almonds and half-boiled eggs.

Dish of veal with Dried plum

Hello, today i want to present for you how to prepare a “dish of veal with dried plums ” from the traditional moroccan dishes :
  • 1 kilo veal
  • Onions
  • Parsley
  • Bharat
  • Salt
  • Oil
  • Little cinnamon
  • dry Plum
  • A little sugar for plum
- To decorate:
  • Almond poached
  • Sesame
  • 2 poached eggs divided halves.
- Keep the meat in the pot and then add oil, onions and spices, parsley, salt and cinnamon.
- Move all well and then put all on fire and add a little water so as not to burn spices and then leave it fluctuate for 6 minutes.
- Add hot water and then leave it to mature.
- Add to plum a bit of water and put it over the fire and then add the sugar, cinnamon and one teaspoon oil and leaves over the fire for  5 minutes .
- Put the meat in the final dish and decorate with boiled eggs and plum and sesame and boiled almonds.

Finaly, Enjoy with this dilicious Dish.

chicken tagine: Chicken Dish

Hello, today I will show you how to prepare a Moroccan chicken tagine, the ingredients are as follows :
Ingredients :
  • 1/2 kilo chicken
  • 1/2 kilo artichoke
  • 1/2 kilo of weight small onion
  • 1/2 cup oil
  • 2 tomatoes
  • A spoonful of parsley, salt, pepper, saffron, paprika.
Now,put the chicken in the tagine, add oil, salt, pepper, saffron, paprika, parsley onions cut fine, put the tagine over low heat let cook 10 minutes, stirring from time to time after adding a large glass of water and let mijoter, 10 minutes adds tomatoes, artichokes without leaves, cook 30 minutes over low heat.
